Some areas will use peppermint or even wormwood if mint isn’t available. The green tea is brewed first, and the mint leaves are added to the tea during the last 2 to 3 minutes of steeping. The tea is poured in to a cup, and in some Moroccan traditions mint leaves are used to garnish the mugs.
Moroccan Mint Tea Culture
Moroccans are known for their hospitality. This extends to their tea service. You can find tea merchants lining the streets in Morocco serving and selling tea to passersby’s. In formal settings the host will prepare Moroccan mint tea in a special way as a sign of hospitality and respect. The tea service begins with the host using a tray with beautiful glasses or mugs. In most cases these will be clear for presentation. The dried green tea, mint leaves, and sugar cubes are all placed on the tray. The water is boiled in a pot away from the service. The host will place the green tea leaves and the mint tea in the tea pot in front of the guests. The boiled water is then brought and poured in to the tea top. While the tea is steeping, the fresh mint leaves are placed in each cup as a garnish. Once the tea has brewed, the host pours the tea for their guests. In some traditions two teapots are used; one for green tea and one for mint. Then the tea is poured from each pot at the same time in to the cups.

Serve it hot with some sugar, or pour it over ice with some simple syrup for a sweet iced tea treat.
